Swine production in France has mirrored the trend in livestock numbers in 2023, with a 5.2% decrease in the number of heads and a 4.4% decrease in volume compared to 2022. In 10 years, the number of pigs slaughtered in France has fallen by 7.6%, representing a loss of 1.8 million pigs between 2013 (23.7 million head) and 2023 (21.9 million head).

Carcass weights in 2023 will return to a level similar to 2021 (94.4 kg) after they decreased in 2022 (to 93.7 kg). This situation, which marks a return to almost continuous growth in weight for over ten years, reflects a less tense market due to falling demand. Consequently, compared with 2022, slaughter has fallen more sharply in terms of number of heads (-4.8%) than in volume (-4.1%). With pork production down to 2.1 million tonnes of carcass equivalent in 2023, France remains Europe's third-largest producer, behind Spain (4.9 million carcass, down 4.5%) and Germany (4.2 million carcass, down 8.6%).
