According to the Sectorial Observatory DBK-INFORMA, the market value of the meat products increased by 0.2% in 2015, reeaching some €6,775 million, in a context of as slight rise of the demand in the hospitality sector.

Exports and imports grew by more than 10%, with a trade surplus of €575 million: 11.9% more than in 2014. Exports reached €955 million, and imports €380 million. Among the main destinations of the Spanish sales we have France (26% of the total), Germany (14%), Portugal (10%), and UK (10%), with these four markets having a share of 60% of the total exports. Regarding the origin of the imports, Germany, France and Italy represented approximately 55% of the total value in 2015.

For the 2016-2017 biennium, a slight growth of the value of the sales in the domestic market is expected. The launching of new products, especially smaller packagings and a healthy range of products, will become more important in the sector as a way of tackling the weak sales. The foreign sales will carry on increasing in the next years, and they may get to represent 16% of the value of the national production in 2017.

In February 2016, the number of companies registered in the Food Hygiene General Register as manufacturers or processors of meat and meat products, fowl and game add up 3,388, with a drop in numbers in these last years. Salamanca and Barcelona are the provinces with the highest number of authorised companies, with 271 and 234 firms, respectively, followed by Badajoz (166) and Girona (151).

Altough there is a moderate tendency towards concentration, the enterprise structure model is characterised by a high fragmentation, and the sector is made up of small local or regional producers.
