Soy has many anti-nutritional factors: heat-labile (antitrypsins, urease and lectins, that can be reduced after applying a correct thermal processing) and heat-stable (glycinin and ß-conglycinin, that can cause an immune response, damage the intestinal mucosa and cause diarrhoea in young animals if soybean is not correctly treated).
